Merry Christmas Cookie Pops


We did it! Took the grandbabies and drove to Boone, N.C. to cut down our Christmas tree. It is a beautiful ten footer and smells all sprucy green..mmmm! My favorite part was getting to drive all the way home through Atlanta with that baby strapped to the roof.. just like in one of my favorite Christmas scenes. These cookie pops remind me of a snowy and wintry night in the Christmas tree forest, perfect paired with a glass of eggnog!
Whip up some super easy cookie dough. You can find the recipe below.

I used this Merry Christmas cookie stamp and cutter that I ordered online from Fancy Flours.



Attach fondant toppers and candy sprinkles with corn syrup.

Cookie Dough Recipe
1 cup salted butter softened
1 1/2 cups sugar
2 eggs 
1 teaspoon vanilla
4 cups all purpose flour
1/4 teaspoon baking powder
 Combine flour and baking powder in separate bowl.
Cream butter and sugar. Add eggs and vanilla, mixing well. Gradually add flour mixture on low to combine.
Gently knead the dough a little to fully incorporate any dry bits. Chill dough. 
Roll out on surface lightly dusted with flour.
Cut out cookies and place on parchment lined pan. 
Chill the cookie filled pan for 15 minutes. Bake @ 375 for 7-9 minutes.
