Olympic Rings Cookies!
I am so excited about watching the Opening Ceremony for the 2012 Summer Olympics!!
This story begins way back in September 1990.
I remember the anticipation
 of finding out which city would host the 1996 Summer Olympics.
I was driving to work when the announcement came over the radio.
    "The International Olympic Committee  
 has awarded the 1996 Olympic Games to the city of..
ATLANTA". Wow! That's us!
We had 6 years to get our city ready...
Back in '96, my husband and I owned a little gift shop in our hometown  of Fayetteville. The kids were out of school for the summer, so they were both at work with me. We were more than happy to close up the shop that hot July day when the Olympic Torch came to our Town Square! 
Our family had so much fun that summer. My daughter and I both, celebrated our birthdays during the two weeks of the Games, and we spent a lot of time enjoying the festive atmosphere in Atlanta for those Centennial Olympics!
                                           So..here we are sixteen years later.                                                                            Tonight is the big night.
 The Opening Ceremony for the 2012 Olympic Games.
 Congratulations to the city of London. 
Good luck to ALL the Olympic Athletes.
But most of all..
GO TEAM USA!
So, today I am making
Olympic Rings Cookies!

 If you have been following my blog, these melted Jolly Ranchers will come as no surprise to you! I am also using using other melted hard candies for my rings today. Root beer barrels and some yellow hard candies I found @ the Dollar Tree.
(I am using the root beer barrels to represent
  the black ring as I could not find any black hard candies)  
 I love these Wilton Fondant Cutters.  
 I am using them today for both the cookies & the candies. First, make your cookie dough. I flavored mine with coconut extract..yum!
 Roll out dough, press the largest cutter into dough, then press the medium sized cutter in the center.
 I use my floured dough scraper to lift up the cookie. This helps to minimize distortion of the circle.
 After placing cookie on parchment paper lined baking sheet, I carefully spike the center with a fork and lift out.
 Ready to bake for 10 minutes in 350 degree oven.
Time to make the candy rings. Prepare the large and medium fondant cutters by spraying liberally with non-stick spray.
With oven @ 300 degrees, place your candies on parchment lined baking sheet and bake for 10 minutes. Immediately press the cutters into melted candy. Let cool about 8-9 minutes. Gently twist the cutters to loosen and lift off. That's it!
When all cookies & candy rings have cooled, simply paint the cookie rings with light corn syrup. Now gently place the candy rings on top and let dry.
Coconut Cut Out Cookies
3 cups all-purpose flour
2 teaspoons baking powder
1 cup sugar
2 sticks salted butter (softened)
1 large egg
1 teaspoon coconut flavor
Combine flour and baking powder in separate bowl.
Cream butter and sugar in mixer.
Add egg and flavoring, mixing well.
Scrape down sides of bowl and then another quick mix.
Gradually add flour mixture on low till combined.
Chill dough.
