Chocolate Dipped Turtle Sticks

These Chocolate Dipped Turtle Sticks have been a long time coming.
Since August of last year actually while visiting Priester's Pecans on our family beach trip. We all flipped for their Fiddlesticks. You can read about our trip here if you like.

 Here, I have made my own version of these ooey, gooey, yummy candies. Where they used raw pecans, I roasted mine in coconut oil. I also used my homemade caramels recipe. My family went nuts for these homemade candy sticks. They are already putting in orders for more!

But oh how I hope you make them!
Begin by oven roasting your pecans. I used one tablespoon coconut oil for each cup of nuts. Bake for 20 minutes at 300 degrees, stirring halfway through. I then sprinkled on just a little fine sea salt.
Mmmmmm....
Prepare the caramel. 
Sprinkle the pecans over the caramel...
..and press into the candy. Let set.
Once candies are set, slice these babies up with a lightly oiled, sharp knife. I let mine set up overnight.

To
Melt the Chocolate. Dip each candy stick in chocolate and place on parchment lined pan.
These go really fast so you might want to sneak a couple into your secret stash before it's too late!

Chocolate Dipped Turtle Sticks

Roasted Pecans
2 cups pecans
2 tablespoon coconut oil (I use this)
Fine sea salt to taste (optional)

Roast nuts for 20 minutes @ 300 degrees stirring halfway through. Sprinkle on salt to taste.

Chocolate
1 12 oz. package Ghirardelli dark chocolate wafers

Prepare pecans.
Prepare caramel. Let set till firm.
(I let mine set overnight)
Slice candy into sticks and dip in melted chocolate. Place on parchment lined pan. 

These "glorified" chocolate turtles are so worth the effort.
Your taste buds will be sweetly rewarded.

    2. This is bill again. I had to let you know this recipe is such a hit with family and friends, just made a double batch, since these are going to all parts of the country for Xmas! some people asked this.
      As far as double batch prep, I used a cast aluminum stock pot, since the caramel mixture boils so much. The biggest thing is not to depend on thermometer attached at the edge of pot. While boiling I used my instant read thermometer to make sure the entire pot was at the proper temperature. Cooled off in the buffalo ny snow
