Marshmallow Bunnies


Happy Spring!

Easter Sunday is almost here. And although this one will look nothing like Easters past, we plan on celebrating big! We will dress up in our new holiday finery and worship our Risen Saviour as millions of others will. Online with our church!

John 3:16 For God so loved the world, that he gave his only begotten Son, that whosoever believeth in him should not perish, but have everlasting life. 

I am thankful for the Hope we have in our Lord and Saviour, Jesus Christ!😃

Other festivities such as our annual Easter family picnics and egg hunts will merely be postponed. And oh how joyous we will be when we are reunited with all our family and friends!

I pray everyone is staying safe and healthy amid this dreadful COVID-19 virus and that it will disappear as quickly as it came.

And while we're all hunkered down and sheltering in place, here are some sweet and fun marshmallow bunnies to make with your kiddos!
I used: regular size marshmallows, white candy melts, pink Sixlets, candy eyes, Shimmies sprinkles, and Wilton Easter bunny feet candies. I also used colored lollipop sticks.
To make the bunny ears, I cut the marshmallows on an angle..
 and then simply pressed the sticky cut side into the sprinkles. 
 They're already looking adorable! We've melted a few candy melts, attached two marshmallows on the stick and dotted some melted candy to place the eyes and nose.
Eeek! This sweet little bunny just needs a little help! 

Let us attach his feet and ears with more melted candy. And Boom! He is finished!

Fourth of July Marshmallows

Chevron Striped Marshmallows for the Fourth of July!

I got this awesome Heidi Swapp chevron stencil at Michaels.
You can also order it directly from Heidi Swapp.
 Additionally, the fondant star cutter and fondant roller were also purchased at Micheals. 
The remaining items were found at Walmart.
I used red and blue colored sugars. The blue was my favorite.

Place stencil atop marshmallow.
 Don't worry about a little overspray as we are dipping these Jet-Puffed S'moreMallows in the colored sugar.
Dip just the dry painted tops of these marshmallows in water. 
Dab off the excess water with a paper towel and press into colored sugar.

I decorated my mallows with a candy star made with Airheads.
 Dabbing a little water on the back of the candy stars will make it tacky enough to stick onto the marshmallow. You could also attach them with a little corn syrup.

plus Moms love handmade gifts from their kiddos!

They look so pretty tied up in cello bags with green ribbon.
Place a sweet bunch in a vase for the perfect Mother's Day table centerpiece.

Chocolate Covered Maraschino Cherry Marshmallow Hearts


Homemade Maraschino Cherry Marshmallows Covered in Chocolate..ahh, so pretty in pink!
In lieu of water for the bloom, I am using maraschino cherry juice. Actually, the only liquids used in these marshmallows are the extracts and the juice. The batter ended up a little thicker than my other recipes and does set up quicker, but they are so good..and oh so sweet for Valentine's Day!

 I absolutely adore making marshmallows! A few years ago, my sweet hubby bought me this awesome book by Eileen Talanian and I've been so hooked ever since..making BananaChocolate Covered Coconut Chocolate MilkMocha Marshmallow Chocolate Plunge marshmallows and more! I started with her basic recipes (and this one too) and just made a few changes, even inventing some new flavors! If you've never tried making your own marshmallows..I say, today is the perfect day. I get happy every time I break open a new box of Knox!
If you aren't planning on making the heart shaped marshmallows, just skip this step. Otherwise you'll need to prepare these chocolate hearts before making marshmallows. I'm using Wilton's truffle mold. Fill heart shells with melted chocolate using a small paintbrush to coat. Chill until firm. Fill a gallon size baggie with marshmallow batter, snip off bottom corner and pipe into candy shell. Cover tops with more melted chocolate. Chill till firm before removing from molds. I then tinted white chocolate with pink gel color to drizzle hearts.

 Now it's time to clip your candy thermometer onto saucepan. Bring to soft-ball stage (234 to 240 degrees). Add bloom to hot sugar mixture and set aside. In mixer bowl with whisk attachment, beat two large egg whites on high speed until you have stiff peaks.
I always have to say..be very careful here! Slowly pour hot sugar mixture into mixer on low speed..splatters equal burns! Once incorporated, add cherries and flavorings. Switch to high speed, mixing for 10 minutes. This is where I always have a to sample a spoonful..or two! Yum! You can now pipe marshmallows into candy molds or pour into a dish prepared with nonstick spray. If you're doing the latter, let candy cure for several hours and turn out onto a surface covered with powdered sugar. Spray a pizza cutter with nonstick spray to cut your beautiful marshmallows.



Maraschino Cherry Marshmallows Recipe
2 Tablespoons plus 1/2 teaspoon unflavored gelatin
1/2 cup cold maraschino cherry juice
2 cups sugar
1/2 cup light corn syrup
1/2 cup warmed maraschino cherry juice
1/4 teaspoon salt
2 large egg whites
1 1/2 teaspoons almond extract
1 teaspoon vanilla extract
3/4 cup chopped maraschino cherries
Sprinkle gelatin over a small bowl filled with cold cherry juice. Set aside.
In heavy bottomed, straight sided saucepan, stir together sugar, corn syrup, cherry juice and salt.
Place over medium heat, stirring until sugar is dissolved.
Continue cooking, without stirring, until mixture reaches soft-ball stage. 
(234-240 degrees on candy thermometer)
Remove from heat, add gelatin and set aside.
In mixer with whisk attachment, beat egg whites till stiff peaks form.
With mixer on low speed add the hot sugar mixture. Once incorporated, add flavorings and chopped cherries.
Turn mixer to high speed, mixing for 10 minutes.
Your marshmallows are ready for piping and/or pouring!

Chocolate Covered Coconut Chocolate Milk Marshmallows


Have you ever wished you could find THE BEST homemade marshmallow EVER?! Yay..you found it here, and I invented it! Ok, so I had some help with the basic recipe. Click here for that delicious recipe. But this Coconut flavored marshmallow, will now be my signature candy! So..I've been thinking about making Coconut marshmallows for a very long time. I was planning on using coconut milk, but when I opened my pantry, I was sad to see (only) coconut chocolate milk. But, I wasn't sad for very long! I made them and let me tell you, they are dreamy! I may have mentioned before, I love coconut flavored sweets. Coconut texture, not so much..unless it's in a Mounds bar. I also used coconut extract and coconut spray oil. Of course you can substitute any non-stick spray if you don't have it on hand.
My kitchen smelled sooo good...like a tropical vacation good!

Adding salt to the above ingredients, you will cook this to the soft ball stage.
Homemade marshmallows are really easy after you've made them a couple times. Just make sure to invest in a good candy thermometer. Once you reach the soft ball stage, remove from heat, add bloom and set aside while you whisk egg whites. Once you've achieved stiff peaks you will slowly add the hot sugar mixture.
Be very careful here! This sugar is HOT!
I pretty much sprayed the entire pan, even all over the top, because marshmallows are a sticky business.
mmmmmmmmm.....let marshmallows set at room temperature overnight..if you can!
I LOVE this stuff, melt some..
And a'dipping we will go! Place dipped candies on parchment paper lined baking sheet to set.
Aforementioned Hunky Hubby loves almonds, and since I love him so..I dipped 'em in chocolate. ;)

Coconut Chocolate Milk Marshmallows Recipe
2 Tablespoons plus 1/2 teaspoon unflavored gelatin
1/2 cup cold coconut chocolate milk
2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup hot water (from the tap)
1/4 teaspoon salt
2 large egg whites
1 1/2 teaspoons coconut extract
1/2 teaspoon vanilla extract
non-stick spray for pans~I used coconut oil spray

Sprinkle gelatin over a small bowl filled with the cold coconut chocolate milk. Set aside.

In a heavy bottomed, straight sided saucepan, mix together sugar, corn syrup, hot water and salt. (my sweet hubby bought me a couple of All-Clad pots that I use only for candy making)
Cook over medium heat stirring until sugar is dissolved.
Attach candy thermometer to pan, making sure it doesn't touch bottom of pan. Continue cooking, without stirring until candy reaches soft ball stage. 235 to 240 degrees fahrenheit.
Remove from heat, add gelatin and set aside.

In mixer, with whisk attachment, beat egg whites until stiff peaks form. With mixer on low speed, carefully pour in hot sugar mixture, and flavor. Turn mixer on high speed and mix for 10 minutes.

Pour candy into your pan prepared with non-stick spray. I used  mini muffin tins. I cut off the corner of a gallon size baggie, filled it with the marshmallow candy and piped it into the muffin tins. Super easy! 
Let stand at room temp overnight.

You will be licking the bowl with this recipe..yum!
All that's left is the fun part..chocolate dipping!
